This curiosity for mixing ingredients together even brought me to study chemistry at university!
Growing up in France, I always loved the wonderful desserts, sweet treats and incredible chocolate you can find in almost any store or bakery.
We always had a cake, or even 3 at home, waiting to be indulged…
My mom even had her famous “3 course cake dinner”
Made of cake, cake and some cake for dessert.
As I grow older, become more health conscious and turn vegan…
I started missing a lot of the wonderful flavors I was used to eating.
For years I felt split between my love for delicious sweets (that most of the time are not healthy) to my choice to nourish and heal my body
And a more ethical way of living…
To lessen my impact on the environment, reduce harm to animals, But also to improve my health…
I still had the desire to bite into a crispy and crunchy pastry (that almost to always contains gluten)
Or find comfort in soft, warm, sweet & spongy cake
But it was far more important for me to avoid food that is known to be not so good for us. Like refined sugar, gluten, dairy and other highly processed ingredients…
As a woman, I’d also experienced hormonal challenges, and through my own research became conscious of the fact that regular milk might not be so good for me.
Then I became pregnant with my daughter… and got another good reason to cut down on dairy products and eat clean.
So I decided to eat mostly plant based food, which felt just great!
But the truth was far from perfect...
